I like guacamole as much as the next guy (or gal) but this one is over the top. The peas, a very surprising addition add sweetness to the creamy blend of luscious avocados, tart lime and spicy jalapeno. One word of caution, you won’t be able to stop once you’ve started with the first chip smothered with this simple little blend of deliciousness.
Serves 6
1 ¼ cups shelled English peas (fresh or frozen)2 large, ripe avocados1 clove garlic, minced1/4 cup minced red onion2 tablespoons chopped cilantro leaves and stems1/2 small jalapeno, seeded and minced1-2 teaspoons lime juice to tasteTortilla chips
Bring a pot of salted water to a boil. Add the peas and simmer for 1 minute. Drain and cool.
Peel and pit the avocados and place in a bowl. With a fork, mash the avocado. Add the peas, garlic, red onion, cilantro, jalapeno and lime juice to taste. Season with salt.
Place the guacamole in a serving bowl and serve with tortilla chips.
