2 cups couscous Kosher salt
COUSCOUS STEP # 1 Put the couscous in a strainer and rinse with cold water. Spread the couscous in a roasting pan and let it dry 10 minutes. Drizzle with 2 tablespoons of olive oil and with your fingers, rub the oil into the couscous and at the same time rake the couscous to remove any lumps. In the bottom of a couscousiere, prepare your stew.
COUSCOUS STEP # 2 Place 2 pieces cheesecloth in the top of couscousiere. It should come up over sides. Add the couscous to the pan and simmer slowly for 20 minutes.
COUSCOUS STEP # 3 After steaming couscous 20 minutes, dump couscous into a large shallow roasting pan and spread it out. Mix 3/4 cup cold water and 1 teaspoon salt. Sprinkle over couscous. Let sit for 10 minutes. Oil your hands and separate and break up lumps by lifting and raking the grains gently.
COUSCOUS STEP #4 Add couscous back into steamer and steam an additional 20 minutes.
